Keto Pumpkin mug cake

I wanted to cook something sweet, but keto as breakfast for my boys.

Ingredients:
2 tbsp pumpkin purée (from can) 1 tbsp coconut flour 2 tbsp almond flour 1 tbsp chia seeds 1 egg 1 tbsp coconut oil 2.5 tbsp Monk fruit sweetener 1/4 cinnamon powder (you can use other spices if you like) 1/4 baking powder
Directions:

In a mug/cup mix well all the ingredients.

Microwave the mixture for 2:30 minutes (150 seconds).

Let it cool a little bit before serving. If you want, you can add some heavy whipped cream on top. I didn’t, but it was still good.

I was really impressed with this recipe – my whole family enjoyed a pumpkin breakfast.
